Jackpot Peas Dip Recipe

Ensure good fortune for all in the New Year with this shareable party appetizer. Warm-out-of-the-oven, this dip incorporates three famously fortuitous ingredients- greens, pork, and black-eyed peas. Ready in under 30 minutes, this recipe makes quick use of canned peas and canned, seasoned collards. Don’t throw away that extra liquid! Save the juice from the collards to really help meld the flavors of this dish together, you won’t be disappointed!

Serves: 8

Time: 30 minutes

Ingredients

2 ounces country ham or 2 strips bacon, diced

1 large garlic clove, minced

1 can seasoned collard greens, drained, liquid reserved

1 can black-eyed peas, drained and rinsed

1 tsp onion powder

cracked black pepper

8 ounces cream cheese, cut into chunks

4 ounces sour cream

4 ounces fresh mozzarella, torn into pieces

lemon juice

salt

Step 1: Drain the collard greens and reserve the liquid. Heat a medium cast-iron or oven-safe skillet over medium heat. Add the ham or bacon, and cook till browned, 4-6 minutes. If using ham, a teaspoon of oil will help hasten things along.

Step 2: Reduce heat to medium-low and add the garlic, stirring quickly for 1 minute. Add 1-2 tablespoons of reserved liquid, the black-eyed peas, pepper, and onion powder. Cook, stirring frequently, for 3 minutes.

Step 3: Add the collard greens, the remaining liquid, and the chunks of cream cheese. Allow cream cheese to melt before stirring in the sour cream and the torn pieces of mozzarella. Taste and add salt and lemon juice to preference. Refrigerate until needed (the longer it sits the better it gets!) or prepare broiler.

Step 4: Broil until top is golden and bubbling, 5-8 minutes. Allow to sit a few minutes before serving.

 

Tip:

One last tip – Should you choose to prepare this in advance, you’ll be better for it. The flavors really meld after a few hours in the fridge. Forgo the broiling until party time.
